Homemade Pine Nut (McMorran) Recipe

From correspondents Dave and Jo McMorran

We have enjoyed your web page immensely and have used many of your tips. We developed the following recipe for pine nut - smells like playdough at first whiff but the taste is wonderful!!

  1. Grind 1 cup of roasted pine nuts with shells (we use a coffee grinder). Be carefull to not grnd the nuts too fine because it is impossible to filter if ground too fine.
  2. Steep for 2 weeks in 3 cups vodka and 1 tsp of pure vanilla.
  3. Filter, filter, filter.
  4. Add 1 cup simple syrup and let age for 2 to 3 weeks.

Great by itself but wonderful in coffee.

We have been using the hinged glass jars with the rubber seals which can be purchased at Cost Plus for a reasonable price.
